So, I thought I’d do something different today. My mother gave me the original recipe (her repertoire may be small but it’s delicious), and I tweaked it a bit based on our tastes. We love hot and spicy chili in this household, but also love our chunkies and flavours. I thought I’d share our recipe so that you can try it out for yourself. I know the ‘recipe’ the Clubhouse package comes with does not call for very much. Personally, I love a party in my mouth.
You will need 1 large crock pot or 2 medium crock pots.
1 pkg Clubhouse Chili Spice (Spicy if you like it hot) – or whatever brand you use
1.5-2lbs of ground beef (cooked)
1 large can tomato sauce (we use Hunt’s spicier version of spaghetti sauce)
2 cans of kidney beans
3 cans of brown beans in tomato sauce (not molasses)
1 can of tomato pieces/chunks with spices
1 can of tomato paste with spices
Chop:
1 large onion
4 cloves of garlic
1 green pepper
Extras – Cayenne Pepper, Dried Red Pepper Flakes, Chili Powder
If you like more heat, add some chopped jalapeno – I am feeding a 2 year old now, so I leave that out for the time being!
Split all ingredients between two crock pots for even taste, including Clubhouse chili spice (I leave the spice until last so that it doesn’t get stuck to the sides of the crock pot). Once all ingredients are mixed together, add a bit more (1-2 teaspoons) of Chili Powder, Cayenne Pepper, and Red Pepper Flakes to taste.
Set the crock pots on low heat for 6-8 hours so that juices mix, and so that onions, peppers, and garlic cook through. Taste test now and again to make sure you have the spices just the way you want them!
